A fresh cheese dairy lives off a very specific promise: a natural, preservative-free product, with a short shelf life and a cold chain that admits no failures. Everything sustaining that promise — the day's milk blend, the pasteurizer's curve, the laboratory's test results, the cleaning between varieties, the date printed on the tub — exists today in papers, isolated panels, spreadsheets and handwritten signatures. It exists, but it does not circulate.

That is the gap an IRIS system fills.
