Industrial artificial intelligence for fresh cheese factories
A fresh cheese dairy lives off a very specific promise: a natural, preservative-free product, with a short shelf life and a cold chain that admits no failures. Everything sustaining that promise — the day's milk blend, the pasteurizer's curve, the laboratory's test results, the cleaning between varieties, the date printed on the tub — exists today in papers, isolated panels, spreadsheets and handwritten signatures. It exists, but it does not circulate.
That is the gap an IRIS system fills. It replaces neither the ERP, nor the pasteurizer, nor the coder, nor the master cheesemaker: it captures what is lost today, puts it under a human signature and returns it as queryable evidence.
