Does it work with the noise of a loading bay?

That is the design condition: forklifts, trucks and background conversation. Recognition is prepared for industrial noise and for trade vocabulary, which is not general language.

Is everything said recorded?

No. The activation word is required. It is a deliberate decision: without it the case is perceived as monitoring and the team works around it, which is how these deployments die.
