A Manchego PDO dairy lives between two clocks. The production clock (the tanker arriving before dawn, the vat being prepared, the mold, the press, the brine, the ripening room) and the documentation clock (the registered farmer's delivery note, the PDO registration number, the breed, the farm, the zone, the monthly submission to the Council). The two clocks should run together. In practice, the documentation one is always behind.
- The farmer's delivery note arrives however it can. The carrier's email, the farmer's own WhatsApp, a paper signed in the truck cab, the co-op app. Each format ends up on a different island of the archive.

The Manchego Cheese PDO Regulation reserves the name for cheese made exclusively with milk from Manchega breed (purebred) sheep, coming from farms registered with the Regulatory Council and located in La Mancha (the provinces of Albacete, Ciudad Real, Cuenca and Toledo). Crossbred milk is not allowed, and milk from outside the zone is not allowed. Every tanker has to be traced by breed and by farm.
